I went to download Jquery UI and realized that it has two options, a stable call and another legacy, I would like to know the difference.

The legacy (legacy) version is an older version, but one might still need it. In the case of jQuery UI it even has support for it. Sometimes there are dependency conflicts (in this case jQuery itself), so this version is still released.
The stable (stable) release is the newest, supported and stable release of jQuery UI. Make sure that in the latest version, many bugs have been fixed, some new features have appeared and new bugs have emerged :P
