How can I make an animation with the "appearing" submenu and when it disappears do a "disappearing" effect using CSS?

In that case you have to use opacity and not visibility. Notice that first I .menu ul ul opaque 0 and I put the ownership of the transition. Already when does the Hover in .menu ul li:hover ul I put opacity as 1 and ready. Now you can have the transition of the sub-menu appearing and then disappearing
