Doubts about backup, templates and domains in the Multisite Network in Wordpress

I researched related topics but did not understand very well some things, could clarify me some doubts?

1) How can I backup a specific website on the Multisite network or would not be possible?

2) I’m used to making edits in wp directly in the template folder, but I went to carry out a test and found that instead of a change working on a site only it replicated to all sites of the Multisite network.

3) Do you recommend a plugin to manage domains? I tried to use Wordpress MU Domain Mapping, but it did not work in a video I saw enabled a field to manage the domains but it no longer appeared in my.

1) The ideal is to use specialized plugins (the best is to search for blog articles analyzing the current options). But to do the basics, just export the specific tables of each site, which are stored with the site ID. In this example, showing tables of sites with ID 2 and 3:

phpmyadmin
(remembering that user tables are only 2 and shared by all sites)

And also backup the following folder: wp-content/uploads/sites/ID_DO_SITE/

2) On Multisite, all sites share the same templates/themes and plugins. If you touch one of them, it affects all the sites where it’s used.
