I was with version 7 of Xcode and just updated to version 8.2.1 and all iOS simulators are gone.
Is there any way I can make them appear again in the Xcode without having to download them all again?

I believe they disappear because of Xcode 8 only to make project for iOS 8+, but if not this is just click on the option "Add Additional Simulators" next to the button "Run" that will open a list with the available Simulators.

If the simulator you want is iOS 8+ then yes, you will have to download the ones you use, now if it is iOS smaller than 8 only with Xcode 7 same.
