I’m developing an app for Windows 10 and on the Microsoft website does not state what is the standard to be adopted for IMage Assets: Square 44x44 Logo, Store Logo and Badge Logo.

The image below is an example, where it shows an image centered within a dimension suggested by the Microsoft.

I’d like to know what the proportion ideal height and width for the center image for the above mentioned patterns.

Looking at the link you posted yourself, there’s this little information tequila:

This is the size of Branding Bar (i.e., the name of the application) when the scale is 100% (normal). The article also explains that the Branding Bar is exactly 1/3 (33%) of the total plate.

Also explains that the icon is 33% also. In this case, I deduce that the ideal size of the icon (which is in the middle of the plate) would be 32px. Being possible to scale up to 400%, the scale has the size of Branding Bar like 128px.

I’m not sure, of course, because I’ve never developed an application for Windows 8+. However, by way of deduction I’m thinking that the size of the icon is just that - between 32px to 128px.
